Idivini farms Sauvignon on UNESCO-listed chalk and loam slopes near the Tanaro River. Enologist Luca Voglino uses a short skin soak, then splits ageing: roughly six months in barrique for half and stainless steel for the rest. Gooseberry, melon and a saline finish mark the result.
