Cavazza farms this Tai Rosso on a single south-facing hectare in the Colli Berici, planted at 5,200 vines per hectare and now about 25 years old. Bunches ferment 14 days in steel and rest six months in third-use French barrique. The limestone delivers a subtle saline bite under raspberry fruit.
