Ageing on lees

Ageing on lees means keeping wine in contact with fine yeast sediment while it matures.

How it works

After fermentation, the deposit usually rests at the bottom of the vessel. Contact can affect how soft or full the wine feels. The sediment does not always have to be stirred.
