Cava

Cava is a Spanish sparkling wine with protected origin, made with a second fermentation in the bottle.

How it works

First, a still wine is made. Yeast and sugar are added for another fermentation. Gas forms inside the sealed bottle and later appears as bubbles in your glass.

How to use this when choosing

Cava is a regulated designation of origin, not another word for every Spanish sparkling wine. For sweetness, also check the label for terms such as Brut or Extra Dry.
