Stéphanie and Philippe Peytavy farm a certified-organic 30 ha mosaic around 180–300 m on the Aumelas plateau, part of a protected garrigue zone. Huis Clos ferments without added sulphur and spends 12 months in barriques. Black cherry, plum and a faint tobacco note track the limestone spine.
