Malolactic conversion

Bacteria turn sharper malic acid into softer lactic acid. Unlike alcoholic fermentation, this process does not turn sugar into alcohol.

Simply explained

During malo, bacteria turn sharper malic acid into softer lactic acid — an acid conversion, not another round of alcohol production.

What happens

Malolactic conversion is carried out by lactic acid bacteria. Malic acid becomes lactic acid; unlike alcoholic fermentation, sugar is not converted into alcohol.

What this tells you about wine

Malo can soften acidity, but does not always create a buttery taste. It is useful to know whether it was complete, partial or avoided.
