Bâtonnage

Bâtonnage means stirring the fine yeast sediment while wine matures.

How it works

After fermentation, many yeast cells settle at the bottom of the barrel or tank. Stirring mixes them back into the wine. This can affect how soft or full the wine feels in your mouth.

How to use this when choosing

The term describes a production step, not an added flavour. If you enjoy a creamy feel, look for a tasting description that mentions it as well.
