After a Berlin office day, a 10 °C pour of this limestone-grown Grenache Blanc resets the palate. Lees aging in tank keeps fennel lift and a hint of honey brisk enough for grilled squid stuffed with herbs.

Clos de l’Amandaie farms north-facing parcels at around 250 m, one of the cooler corners of Grés de Montpellier. Stéphanie and Philippe Peytavy ferment the 80 % Grenache Blanc blend with native yeasts, then leave it ten months on fine lees in tank. The result is mineral tension with mint and fennel lift.
