Fine lees

Fine lees are the fine sediment left after fermentation, made up largely of yeast cells.

How it works

The yeasts previously turned sugar into alcohol. Afterwards, many settle to the bottom. Some of this fine deposit can remain in contact with the wine while it matures.

How to use this when choosing

If a bottle says aged on lees, that contact was used during production. It does not mean you must find visible yeast in your glass.
